You know...I really admire the person who first decided to make pizza out of french bread. Because as delicious as homemade pizza dough is, french bread pizza is just so wonderfully fast. Plus - it's kind of fun because it feels like a new take on pizza, but it's also a giant time-saver!
If you like spinach artichoke dip (and who doesn't??) then this recipe is FOR YOU! It's like spinach artichoke dip for the laziest of lazy people, because it has all the elements of the dip - the bread, the gooey & creamy spinach artichoke mixture, and the melty mozzarella - but it's all piled into one handheld package.
Using garlic herb cream cheese as the base for the spinach artichoke dip is a great way to add a ton of flavor with minimal effort/ingredients. Frozen spinach and canned artichokes are two more time and prep savers, and they work just perfectly in this recipe. Just make sure to squeeze out as much moisture as you can after defrosting the spinach, and thoroughly drain the artichokes to keep the dip from getting watery.
This spinach artichoke French bread pizza is perfect for a really fast dinner, or an easy to eat party appetizer...just cut the pieces into strips or squares!

Spinach Artichoke French Bread Pizza
Ingredients
- 4 oz garlic herb cream cheese, softened/at room temperature
- ¼ cup plain greek yogurt (or light sour cream)
- 2 tablespoon light mayo
- 2 tablespoon parmesan cheese, grated (about ½ oz.)
- ¼ teaspoon kosher salt
- ⅛ teaspoon fresh ground pepper
- pinch crushed red pepper flakes (more or less to taste)
- 10 oz frozen spinach, thawed and squeezed of excess moisture
- 14 oz canned artichoke hearts, drained and roughly chopped
- 1 french baguette (about 8 oz), cut in half lengthwise and crosswise
- ¾ cup shredded mozzarella cheese
Instructions
- Preheat oven to 375°F. In a large bowl, add cream cheese, greek yogurt, mayo, parmesan, salt, pepper & crushed red pepper flakes and mix well to thoroughly combine. Add spinach and artichoke hearts and fold into the cream cheese mixture.
- Spread ¼ of the mixture on each piece of bread, arrange on a baking sheet, and top with the mozzarella cheese. Bake until heated through and cheese is melted and slightly browned on top, about 12-14 minutes. Serve immediately.

I love French bread pizza! It definitely takes me back to the grade school cafeteria. Although, this recipe looks much tastier than the low rent version we were served back in the day. I'm a huge fan of using things that I have on hand as a base for a quick, tasty meal. Nice zhuzhing!

French bread pizza takes me back too...somehow the French bread pizza in the cafeteria was MORE of a treat than the regular pizza!
