4ozgarlic herb cream cheese,softened/at room temperature
¼cupplain greek yogurt (or light sour cream)
2tablespoonlight mayo
2tablespoonparmesan cheese,grated (about ½ oz.)
¼teaspoonkosher salt
⅛teaspoonfresh ground pepper
pinchcrushed red pepper flakes(more or less to taste)
10ozfrozen spinach, thawed and squeezed of excess moisture
14ozcanned artichoke hearts, drained and roughly chopped
1french baguette (about 8 oz),cut in half lengthwise and crosswise
¾cupshredded mozzarella cheese
Instructions
Preheat oven to 375°F. In a large bowl, add cream cheese, greek yogurt, mayo, parmesan, salt, pepper & crushed red pepper flakes and mix well to thoroughly combine. Add spinach and artichoke hearts and fold into the cream cheese mixture.
Spread ¼ of the mixture on each piece of bread, arrange on a baking sheet, and top with the mozzarella cheese. Bake until heated through and cheese is melted and slightly browned on top, about 12-14 minutes. Serve immediately.
Notes
Leave each piece whole or cut in half to serve as a meal, cut into strips or squares to serve as an appetizer. I recommend mixing the base ingredients of the dip together first so you can get them nicely combined without breaking up the spinach and artichokes too much.
