A cool and creamy dip bursting with summer flavors of fresh basil, tangy sun-dried tomatoes, and salty Parmesan.
Life is good. As I write this I am currently in Boyne City, Michigan on what has been an AWESOME summer family vacation. My aunt & uncle have a cabin up on Deer Lake and we've spent the last 4 days enjoying the beauty that is Michigan in the summertime. Boat rides, beach days, tubing, biking, bags, giant Jenga...it just doesn't get any better.
And you know what else we have been doing? EATING. Oh, man we have been eating like kings. And my contribution to the family smorgasbord was this creamy, flavorful basil-packed dip. I know I'm tooting my own horn here...but it was a hit. Like, people scooped a little onto their plate, devoured it, and immediately came back for more (yay!). There is honestly so much flavor packed into this dip that it almost surprises you a little bit when you take a bite. The aromatic basil combined with the intense flavor of the sun-dried tomatoes is a perfect pair, the Parmesan cheese adds a salty nuttiness, and fresh lemon is just the thing to brighten it up. Yum.
Let us collect our ingredients!
Combine everything in a large bowl...
...and mix! Did I mention this recipe is super easy? Because it is.
Now - this next step is VERY, VERY IMPORTANT!
Stick that baby in the fridge overnight. You must! It will taste pretty good now, but it will be exponentially better once those ingredients have had a chance to get to know one another and soak up each other's flavors. Letting it sit overnight will be the difference between pretty good and awesome. Taste it now, and then taste it after the flavors have had time to meld and I promise you will notice a HUGE difference.
Stir it up one more time, and serve it in a cute bowl with pretzels, pita chips and/or cucumber slices!

Sun-Dried Tomato Basil Dip
Makes about 2 cups of dip
Ingredients
- 1 cup light sour cream
- ½ cup light mayo
- ½ cup fresh basil leaves , chopped
- ⅓ cup parmesan cheese , grated
- ⅓ cup dry sun-dried tomatoes , diced
- 1 tablespoon fresh lemon juice
- 1 teaspoon lemon zest
- 2 cloves garlic , grated or finely minced
- ¼ teaspoon salt
- ½ teaspoon pepper
- Pretzels , pita chips and/or cucumbers, for serving
Instructions
- Combine all of the ingredients in a large bowl and mix well to combine. Refrigerate overnight.
- Stir once more before serving, and serve with pretzels, pita chips and/or cucumber slices!
