Hi Emily! I think diced cucumbers would be a great substitute for the peppers, they will add a nice fresh crunch. I personally prefer english/hothouse cucumbers because the skin is thinner and less bitter, but if you want to use a regular cucumber I would take the peel off. I'd love to hear how it turns out! ????

Thank you for reposting these, Rachel!!!! I have tried all of them and they are all perfect for summer BBQs!!! The Sun-dried Tomato Basil Dip is always a hit! I have a bumper crop of basil this year. I took some creative liberties and used smoked sun-dried tomatoes....so yum!
