    Salted Dark Chocolate Dipped Kettle Chips

    Crunchy kettle cooked potato chips are dipped in rich dark chocolate and sprinkled with flaky sea salt for a perfect sweet & salty treat!

    Sweet and salty - my favorite kind of dessert!

    Are chocolate dipped kettle chips still considered kind of a weird combo, or has pretty much everyone come around to the idea by now?

    I.e...Are you ok with me doing this or do you think I'm a big weirdo? 

    In all fairness, I do remember the first time I saw a chocolate covered potato chip, and I'm not going to lie to you - I was really confused. There was a cute little candy store in downtown Plymouth called House of Fudge, and we used to go there sometimes to get nice fancy candy for holidays. I remember seeing the chocolate covered chip in the glass display case and thinking, "uhhh...what?"

    Well don't knock it 'til you try it, friends - that's all I can say. Plus I was a kid then and now I'm a grown-up and I'LL PUT ALL THE CHOCOLATE I WANT ON MY POTATO CHIPS, THANK YOU.

    There is just a special something about the combination of rich dark chocolate topped with those briny, crunchy salt flakes, and blanketing it over a super crunchy kettle chip is the icing on the cake. (Icing on the chip? Chocolate on the chip?)

    These are ridiculously simple to make.

    Step 1: Melt chocolate.

    Step 2: Dip chips in melted chocolate.

    Step 3: Sprinkle with flaky sea salt & let cool.
    Maldon sea salt is what I use and I LOVE it. The pyramid-shaped crystals not only add a great texture, but they also add a gorgeous look to anything you put them on, like in these Salted Fudge Brownies.  You can order Maldon sea salt online.

    That's it. Just a few quick steps and a few simple ingredients standing between you and salty sweet goodness.

    Crunchy kettle cooked potato chips are dipped in rich dark chocolate and sprinkled with flaky sea salt for a perfect sweet & salty treat!

    Servings: 65 small/med chips
    Ingredients
    • 3.5 oz dark chocolate
    • About 65 small/medium kettle cooked potato chips
    • flaky sea salt, to taste
    Instructions
    1. On the large holes of a box grater, grate about 1/3 of the chocolate and set aside. Finely chop the remaining 2/3 and transfer to a microwave safe bowl. Microwave for 30 seconds, stir, microwave for another 10 seconds, and stir again. Continue microwaving at 10 second intervals, stirring each time, until the chocolate is just thoroughly melted (probably about three 10 second intervals total). Once the chocolate is melted, remove from microwave, add in the grated chocolate, and stir well to combine.

    2. Dip a chip about halfway in the melted chocolate and allow any excess to drip off. Place on a sheet of parchment paper or wax paper and sprinkle with flaky sea salt, to taste. Repeat with remaining chips and allow to cool until the chocolate has set, about 30 minutes. 

    Recipe Notes

    Reserving 1/3 of the chocolate and adding it back in after heating is a method of tempering chocolate called seeding (I've simplified the process a little, read more about it here). Tempering the chocolate helps to ensure that it sets up firmly after being melted. 

     

    If you find that the chocolate is starting to get a little too thick and hard to work with, microwave it for another 5 seconds or so and stir. Be careful not to overhead it at this point otherwise it will negate the effects of the seeding method.

        I love the Maldon sea salt flakes, I picked them up at Whole Foods & they’re on Amazon too! They are so good, crunchy little pyramids of salty deliciousness
