My basil is going strong this summer, and I am loving taking full advantage of the bounty of sweet, aromatic, beautiful leaves!
I love using fresh herbs whenever possible. I have a couple little planters with basil, parsley, chives, and a few other popular herbs, and it's so great to just walk into the backyard and snip off some freshness. (Side note: I use a couple of self watering planters similar to this one for my herbs - it really takes the guesswork out of watering if you don't have a green thumb!)
Basil is such a summery flavor; it's sweet, herby and fresh...and tastes amazing on these crostini! The fresh ricotta is creamy and rich, the pepper adds a savory spiciness, a little drizzle of honey is just the right touch of sweet, and a final pinch of flaky sea salt brings out all of the flavors.
These little ricotta, honey & basil crostini are a perfect appetizer for a party: it's quick & simple finger food that's easy to eat in just a couple bites!

Ricotta, Honey & Basil Crostini
Ingredients
- 8 slices baguette
- 2 teaspoon olive oil
- ⅓ cup ricotta cheese (I recommend full fat ricotta)
- fresh ground pepper, to taste
- About 4 large fresh basil leaves, julienned
- 2 teaspoon honey
- flaky sea salt, to taste
Instructions
- Arrange baguette slices on a baking sheet. Spray or brush lightly with olive oil and broil until lightly toasted. (Note: Keep a VERY close eye on the bread while it toasts! Broilers can move very quickly.)
- Transfer toasted baguette slices to a serving platter. Top each piece with about 2 teaspoons of ricotta, a couple grinds of pepper, julienned basil, ¼ teaspoon of honey and a pinch of flaky salt. Serve immediately.
