    Quick Chicken Caesar Salad Wraps

    These chicken caesar salad wraps are a quick & tasty meal, and a great way to dress up leftover chicken with a few fridge & pantry staples!

    Looking for a super quick & flavorful lunch with just a handful of ingredients? Well look no further! These wraps have the classic flavors of a caesar salad, all wrapped up in a convenient little hand-held package.

    The caesar-inspired dressing is super easy to make, and made from a lot of fridge & pantry staples you're likely to have on hand. Add some romaine lettuce for crunch and freshness, and a few croutons for EVEN MORE crunch (because why not?), and this wrap checks off all the boxes!

    I was in love with the chicken caesar salad wraps in our high school cafeteria. I know that's kind of a random thing to remember, but it was probably my favorite thing to buy for lunch sophomore year, and these wraps definitely make me think of those days!

    I definitely recommend using rotisserie chicken for this recipe, it's honestly just perfect. I don't know about you, but when I bring home a rotisserie chicken for dinner, it smells so good that we end up just standing at the counter and ripping into it with our hands like cavemen instead of carving it up and putting it on plates like civilized people. Don't lie, I know you've done it. (Right? Help me out here...)

    As delicious as rotisserie chicken is the day you bring it home, sometimes I feel like the leftovers could use a little extra love...and this is the perfect way to dress it up!

    Quick Chicken Caesar Salad Wraps

    These chicken caesar salad wraps are a quick & tasty meal, and a great way to dress up leftover chicken with a few fridge & pantry staples!

    Ingredients

    For the dressing

    • 2 tablespoon olive oil
    • 2 tablespoon mayo or light mayo
    • 2 tablespoon parmesan cheese, grated
    • 1 tablespoon fresh squeezed lemon juice
    • 1 ½ teaspoon dijon mustard
    • 1 teaspoon Worcestershire sauce
    • 1 clove garlic, pressed or minced
    • ⅛ teaspoon fresh ground pepper

    For the wraps

    • 2 large (10-inch) flour tortillas or wraps
    • 1 ½ cups cooked chicken, cut into ½ inch pieces (rotisserie chicken or leftover grilled chicken is perfect)
    • 2 ½ cups romaine lettuce, chopped
    • ¼ cup croutons
    • 2 tablespoon parmesan cheese, grated

    Instructions

    • In a medium bowl, whisk together all dressing ingredients until well combined. 
    • In a large bowl, add chicken, lettuce, croutons, parmesan cheese, and about ¾ of the prepared dressing and toss to combine. 
    • Warm the tortillas in the microwave for about 5-10 seconds (this will make them a little more pliable and help prevent tearing). Divide the dressed chicken & lettuce mixture evenly between the tortillas and drizzle with remaining dressing, if desired. Roll into wraps, cut in half and serve immediately. 

    Notes

    You can heat the chicken or use it cold, whichever you prefer. I personally prefer to leave the chicken cold but it's totally up to you!

      Yummy, that dressing is delicious!...and yes, caveman style!!!!!
      Also, a tip to share....whenever I get a rotisserie chicken, I pour all those delicious juices into a small container and freeze it for soups.

        Love that idea! I usually pour the juices over Charlie's dinner and I think he may revolt if I stopped ????
