A tostada is pretty much just a flat taco, and we know everyone is kind of obsessed with tacos. The world rejoiced when iOS 9.1 added the taco emoji.

The beauty of flattening out the taco is that you can load it up with even MORE delicious toppings like smoky refried beans, luscious cheese, crisp & fresh lettuce, tomato & onion, creamy avocado and cool salsa.
This is one of those meals that I can make at the drop of a hat, because all of the ingredients are things I typically have on hand. I can't tell you how many times this has been an, "oh crap I didn't meal plan or go to the grocery store and we're hungry like NOW," kind of dinner.
But the best part is that you'll love yourself for having this awesome recipe in your arsenal because it is SO GOOD!
It's also really customizable too. Want to keep it dairy-free? Leave off the cheese and sour cream! Don't like tomatoes? Skip 'em! Only have cheddar cheese in the fridge? Use that instead! The world is your oyster! Or rather...the world is your tostada!

Insanely Easy Refried Bean Tostadas
Ingredients
- 4 tostada shells
- 1 16 oz. can refried beans
- 1 cup shredded lettuce (iceberg, romaine, or green leaf work great)
- ½ cup fresh tomato, chopped
- ¼ cup red onion, diced
- 1 avocado, diced
- ¼ cup cheese, crumbled/shredded* (queso fresco, cheddar, pepper jack, & colby jack work great)
- ¼ cup sour cream*
- ½ cup salsa
- 2 tablespoon cilantro, chopped
Instructions
- In a microwave-safe bowl, heat the refried beans, stirring occasionally, until warmed throughout - about 90 seconds.
- Use the backside of a spoon to gently spread ¼ of the warm refried beans on each tostada shell. Divide remaining toppings evenly among the 4 tostadas. Serve immediately.
