Ingredients
4tostada shells
116 oz. canrefried beans
1cupshredded lettuce(iceberg, romaine, or green leaf work great)
½cupfresh tomato,chopped
¼cupred onion,diced
1avocado,diced
¼cupcheese,crumbled/shredded* (queso fresco, cheddar, pepper jack, & colby jack work great)
¼cupsour cream*
½cupsalsa
2tablespooncilantro,chopped
Instructions
In a microwave-safe bowl, heat the refried beans, stirring occasionally, until warmed throughout - about 90 seconds.
Use the backside of a spoon to gently spread ¼ of the warm refried beans on each tostada shell. Divide remaining toppings evenly among the 4 tostadas. Serve immediately.
Notes
*Omit the cheese/sour cream to keep it dairy-free.This recipe is VERY customizable! Feel free to swap out the type of onion or cheese, or add or omit any toppings you like or don't like!Prep these right before you eat them. If you aren't eating all 4 right away, keep the leftover tostada shells, beans, and veggies stored separately or they will get soggy.
