A Martin family classic: Surprisingly addictive and delicious rice salad with ham, cheese, tomatoes, corn, green onions and olives.

Ingredients
3cupsuncooked basmati rice
10ozdeli ham, cut into small bite-sized pieces
8ozgouda cheese, cut into small bite-sized cubes
1 ½pintsgrape tomatoes, quartered
1 15.25ozcan golden sweet corn, drained
1bunch green onions, thinly sliced
1 2.25ozcan sliced black olives, drained
1recipe garlicky red wine vinaigrette(recipe follows)
Garlicky Red Wine Vinaigrette
¾cupextra virgin olive oil
½cupred wine vinegar
1tablespoondijon mustard
3clovesgarlic, pressed or finely minced
½teaspoonsalt
½teaspoonpepper
Instructions
Cook the rice according to the package instructions. Transfer the cooked rice to a very large bowl and allow it to cool for at least 10 minutes, stirring lightly once or twice while it cools.
Add the ham, cheese, tomatoes, corn, green onions and olives. Drizzle over the garlicky red wine vinaigrette, and stir to combine. Enjoy!
