Ingredients
2 ½lbsfresh raw beets
1 ½tablespoonolive oil
1teaspoonkosher salt
½teaspoonpepper
1 ½teaspoonfresh thyme,chopped, plus more for garnish
1tablespoonbalsamic reduction*
3tablespoongoat cheese,crumbled
Instructions
Preheat oven to 400°F. Trim the root end off beets, peel with a vegetable peeler, and cut into 1 ½ inch chunks. Transfer to a baking sheet, add olive oil, salt, pepper & thyme and toss to combine. Spread out into a single layer on the baking sheet and bake for about 45 minutes, until fork-tender.
Allow to cool slightly, and transfer to a serving platter. Top with crumbled goat cheese, balsamic reduction, and a little more fresh thyme, salt & pepper. Enjoy!
Notes
*Balsamic reduction has a more concentrated flavor and and is thicker & more syrupy than standard balsamic vinegar. You can purchase balsamic reduction ready made at the store, or you can make your own by simmering balsamic vinegar until it's reduced, thick & syrupy. This dish tastes great warm, room temperature, or cold right out of the fridge!
