Guys, I am on the avocado toast train and I am not getting off! WHO'S WITH ME? I LOVE avocado, and who doesn't like a reason to eat it for breakfast? Or a snack? Or lunch? Or basically whenever you feel like it because avocado is nature's butter and who doesn't want that all day, every day? Woo!
This Simple Tuna Avocado Toast is so easy to make, and packs a ton of taste with just a few ingredients. The toasted wheat bread is a crisp and nutty base for the creamy, buttery avocado, which pairs so well with the tuna that it wont seem odd that you're having fish for breakfast. Topped with a sprinkle of crushed red pepper flakes for a tiny bit of kick, and a squeeze of fresh lemon to brighten it up and THIS my friends, is the new breakfast of champions.
The inspiration for this recipe came from Alton Brown's Sherried Sardine Toast recipe that my brother, Andy, made for breakfast one day when we were on vacation. Here's the thing - it was SO GOOD with the sardines. If I'm being honest, I really wasn't sure how I was going to feel about it (sardines? really?), but it was super delish.
So I thought to myself...will the sardines scare people off if they have never tried it? I feel like the answer is probably yes for most people, so my spin on the recipe was to make it a little more approachable by using tuna in place of the sardines, regular wheat bread that I had on hand, and subbing red wine vinegar for sherry vinegar. I definitely recommend using oil-packed tuna for this tuna avocado toast recipe, because 1) it makes it much more similar to the original Sardine Toast and 2) the olive oil really enhances the flavor and adds richness to the tuna. That being said, I have also made it with water-packed tuna and just added my own olive oil and it was also delicious! If you have fancy bakery bread...have at it! I'm giving you all kinds of options here!
Ok let's go!
So few ingredients...see what I mean? Simple!
Drain the oil from the tuna and reserve in a small bowl.
In a separate medium bowl, combine 1 tablespoon of the reserved oil, the vinegar, parsley, lemon zest and fresh ground pepper, and whisk to combine.
Add the drained tuna to the oil/vinegar/parsley mixture, and stir gently to coat the tuna.

Brush the slices of bread with some of the reserved oil and toast!
In a separate bowl, mash the avocado with a little salt. I personally like to leave it a little chunky but hey, it's your toast - mash it to whatever consistency you like!
Spread the mashed avocado on the toasted bread, top with the tuna mixture and then sprinkle with a little more parsley, crushed red pepper flakes, a little more salt and pepper and a generous squeeze of lemon, and dig in!

Simple Tuna Avocado Toast
Makes 4 pieces (serves 2-4 depending on how hungry you are)
Ingredients
- 1 can olive oil packed albacore tuna (or water-packed albacore tuna plus 1-2 tablespoon olive oil)
- 1 tablespoon red wine vinegar
- 2 tablespoons chopped parsley , divided
- ¼ teaspoon lemon zest
- Salt & pepper , to taste
- 4 slices wheat bread
- 1 ripe avocado
- Crushed red pepper flakes , to taste
- Half of a lemon , cut into wedges
Instructions

- In a separate bowl, mash the avocado with a little salt. Spread ¼ of the mashed avocado on each slice of toasted bread, and top with ¼ of the tuna mixture. Sprinkle each piece with the remaining parsley, crushed red pepper flakes, a little more salt and pepper and serve with a lemon wedge.

This sounds wonderful. They always say that you should have protein for breakfast, and I rarely do, because I hate eggs. This would be a way to get protein and stay full throughout the morning!
