    Roasted Broccolini with Spicy Peanut Sauce

    Broccolini is roasted until crisp tender, drizzled with a spicy peanut sauce and topped with an extra kick of lime juice and Sriracha. You are going to love this super quick side dish!

    This dish will make you want to eat your veggies!

    Although...really I think it's the sauce that will make you want to eat your veggies. This sauce is so yummy that I'm pretty sure it would taste great on just about anything, but it's especially delicious on crisp-tender roasted broccolini.

    My sister-in-law Delia was telling me about a Food Network recipe for Peanut Butter Broccolini that she tried recently, she said everyone who was over when she made it LOVED it so I couldn't wait to try it!

    I'm kind of in love with Pinch of Yum's Firecracker Vegan Lettuce Wraps - especially the sauce...omg (quick side note: you need to try those lettuce wraps because they are awesome).

    The peanut sauce in this recipe sounded really similar so I was pretty sure I was going to love it - and I did! I made a couple small modifications like using a little less honey, adding a bit of rice vinegar, and mixing some Sriracha right into the sauce in addition to drizzling it on top. Pete and I like this sauce so much that I used it to make these amazing Asian chicken nachos!

    Roasting the broccolini for just 10 minutes at a high temp makes it tender but still crisp, and the florets get a tiny bit of charred flavor. The peanut sauce is nutty, sweet and spicy, and the extra little kick of lime juice over the top brightens it all up in a perfect way. Add in the crunch from the peanuts and the freshness of the cilantro and this side dish really checks off all the boxes.

    Plus it's super fast - roast the broccolini while you whip up the sauce and this dish comes together in about 15 minutes.

    Roasted Broccolini with Spicy Peanut Sauce

    Broccolini is roasted until crisp tender, drizzled with a spicy peanut sauce and topped with an extra kick of lime juice and Sriracha. You are going to love this super quick side dish!

    Ingredients

    For the broccolini

    • 1 lb broccolini (baby broccoli)
    • 2 Tbsp olive oil
    • ½ teaspoon kosher salt (more or less to taste)
    • ¼ teaspoon fresh ground pepper (more or less to taste)

    For the sauce

    • 3 tablespoon creamy peanut butter
    • 3 tablespoon low sodium soy sauce
    • 1 tablespoon Sriracha
    • 1 tablespoon honey
    • 1 tablespoon sesame oil
    • 1 tablespoon rice vinegar
    • 2 cloves garlic, minced or pressed

    For serving

    • 1 lime, halved & cut into wedges
    • 2 tablespoon chopped peanuts
    • 1 tablespoon chopped fresh cilantro
    • extra Sriracha, for drizzling on top (if desired)

    Instructions

    • Preheat oven to 425ºF. Toss broccolini with olive oil, salt & pepper and spread into a single layer on a baking sheet. Roast for 10 minutes, until broccolini is crisp tender and the florets are lightly browned. 
    • While the broccolini roasts, combine all sauce ingredients in a mini food processor, small blender, or in a measuring cup (to use with an immersion blender). Blend until smooth. 
    • Transfer broccolini to a serving platter and squeeze half of the lime over the platter. Top with spicy peanut sauce, chopped peanuts, cilantro, & more Sriracha (if desired) and serve with the remaining lime wedges.

    Notes

    Broccolini is sometimes called baby broccoli or broccoletti. You can substitute regular broccoli if you aren't able to find broccolini.
