    Full disclosure: we are not being healthy today. Today, we are recreating Domino's Parmesan Bread Bites by baking up little hunks of pizza dough and smothering them in garlic, butter and parm. 😋

    I can never resist adding some parmesan bread bites to our order when we get Domino's, and I decided I had to figure out how to make them at home. We usually order thin crust pizza, and while I really do love all the toppings and the crispiness of the crust (Pacific Veggie FTW!), I always find that I sort of miss the chewiness of good old classic pizza dough. Toss in a few bread bites and that craving is satisfied! Plus the thin crust is a lot less calories so it all balances out in the end...right?

    These little parmesan bread bites are so addictive. Rolling the pizza dough into little logs gives them enough body that they puff up in the middle and have a slightly chewy inside, but they are still crispy on the outside from the butter and parm that goes on before they're baked. The garlic salt adds a punch of savory flavor, and they are just perfect dipped into some marinara sauce or pizza sauce.

    Garlic Parmesan Bread Bites

    Inspired by Domino's Parmesan Bread Bites, these little nuggets of baked pizza dough are bursting with garlic, butter & parmesan cheese...what's not to love?

    Servings 24 bread bites

    Ingredients

    • Half of one 13.8 oz tube refrigerated classic pizza crust (or about ½ lb of your favorite pizza dough)
    • 3 tablespoon melted butter, divided
    • About ½ teaspoon garlic salt, divided
    • About 2-3 tablespoon parmesan cheese (I used Parmigiano Reggiano), finely grated
    • ¼ teaspoon dried parsley
    • ⅓ cup marinara or pizza sauce, for dipping

    Instructions

    • Preheat oven to 350°F. Unroll the pizza dough and cut into 1 ½ inch strips. Roll each strip into a log about the diameter of your finger. Cut each log into 1 inch nuggets. Arrange the dough nuggets evenly on a baking sheet lightly sprayed with cooking spray. Brush 1 tablespoon melted butter over the dough nuggets, sprinkle lightly with garlic salt (about ¼ tsp), and grate a little bit of parmesan cheese over top (about 1 Tbsp).
    • Bake for about 14 minutes, rotating pan halfway through cooking time, until lightly golden brown (do not over bake or the dough will get very tough).
    • Mix the remaining ¼ teaspoon garlic salt and ¼ teaspoon parsley with the remaining 2 tablespoon melted butter. Brush the butter mixture liberally over the bread bites. Scoot the pieces together on the pan and grate more parmesan cheese over top (about 1-2 Tbsp). Transfer to a platter and serve with marinara or pizza sauce for dipping.

    Notes

    This recipe can very easily be doubled to use the entire pizza crust. I only made a half batch because there are only two of us, and also I made & ate a LOT of these while testing the recipe. As much as I would love to eat my weight in buttery bread bites - my waistline would not love it. 😜

      Tastes really good!! It might have been my fault but the dough is really dense and isn't light or fluffy (probably me!) Overall, super amazing!

      What a bummer, I measured everything according to your recipe and mine tasted nothing like Dominos Parmesan bread bites. They were so good they were certainly not a copycat recipe.

      These are great, but I made knots bumped the oven up to 425, and added a 1/2 tspn of oregano, checked after 5 minutes turned sheet and they come out delicioso. Thanks so much for the recipe!

      I mixed my own dough, from a copycat recipe for Domino's crust, tweaked to use fast acting yeast, because the wife wanted them NOW. Used your instructions to make the bread bites with an extra 30 minute rise before putting them in the oven. We also stuffed some with green olives and some with chopped pepperoni. They all turned out as light and fluffy as what we first tried from Domino's last week. Perfect! Thanks for the excellent guide to get us started on our version.

      Hi! I work at dominoes and i’d love to add some tips. So the oil we put on the outside is a mix of olive oil and butter, with oregano and the tiniest bit of parsley. Then we sprinkle with parmesan! It comes out best if you do that IMMEDIATELY out of the oven. Also, the fastest way to cut the dough isn’t rolling it into logs, which can overwork the dough, It’s laying it out in a rectangle and cutting them in a 4x8 (to make two 16 pieces)

      Did not work no matter how long I cooked them they were hard and on the inside they were very doughy
