My friends - I have been MIA and I know it. I'm sorry! It has been a BUSY couple of months. My bestie Danielle got married (yay!) and I was her maid of honor! So I had a kick-ass bachelorette party to plan, a killer speech to write, and on top of that, April-June is pretty much the height of our spring events season. WHEW!
Anyway - enough excuses, I'm back now! And I am SUPER excited to share this recipe with you! This is one of those recipes that Pete can't believe I haven't posted already, because we have been making these delicious stuffed turkey burgers for years.
Turkey burgers can get a bad rap for being dry - but stuffing them with cheese and roasted red peppers 100% solves that problem. It's healthier than a traditional burger, but they are are so juicy & flavorful you don't feel like you're missing out! You can use whatever kind of cheese you like on the inside, but you definitely want to pick one that melts well. The original recipe calls for mozzarella, but my personal favorite is jalapeño Havarti. I love the little bit of spiciness it adds and it's super creamy so it melts really well.
I recommend using about 5 ounces of meat per burger - so if you have 1 lb. of turkey that will make 3 good-sized burgers, for 4 burgers you want about 1.25 lbs. of turkey. To stuff the burgers, I find it's easiest to divvy all the meat up, and then take one portion of meat and separate it in half and make two thin patties.
Then, pile your stuffing on top of one of the patties, leaving about a half-inch border around the outside.
Plop the other patty on top and pinch the edges together to seal them up nice and tight, season with salt and pepper and they are ready for the grill!
You can broil them or cook them on the stovetop - but nothing beats the flavor of the grill, in my humble opinion.
Pile on your favorite toppings and dig in!

Stuffed Turkey Burgers
Ingredients
- 1 ¼ lbs. lean ground turkey breast
- ½ cup jarred roasted red peppers, chopped
- 2 oz. good melting cheese, like jalapeño Havarti
- Salt & pepper
- 4 hamburger buns
- Your favorite burger toppings, like lettuce, tomato, onion, pickle, etc.
Instructions
- Divide turkey into 4 equal portions. Take each portion and divide it in half to make 2 thin patties so you have 8 total.
- Top 4 of the patties with ½ oz. cheese and 2 Tbsp. roasted red peppers each, leaving a ½ inch border around the outside. Top with the remaining patties and pinch the edges together to tightly seal into 4 stuffed patties.
- Season with salt and pepper, and grill until cooked through - about 4-5 minutes per side. Top with your favorite burger toppings and dig in!
