Aren't slow-cookers just so wonderfully easy? Throw a bunch of stuff in and a few hours later dinner is done! Ta da!
This is such a great winter recipe, it's hearty and delicious and really easy. Slow-cooking the chicken makes the meat really tender, the spices give it lots of flavor and the yogurt brightens up the sauce and gives it a yummy creaminess. Plus it smells amazing while it's cooking.
Since this was a pretty busy week with everyone getting back into gear after the holidays, we were looking for a dish that wouldn't require a lot of time and attention. Using the slow-cooker was perfect and I particularly like this recipe because it doesn't require a lot of prep before you put everything in.
The very first time we had this, Pete made it all by himself! He said it was one of the easiest things he's ever done (which makes perfect sense because the recipe came from Real Simple), and that was made even better by how tasty it was. A lot of the ingredients are pantry/fridge/freezer staples too, so it's a good recipe to keep in your back pocket when you don't want to make a trip to the store. Easy and super tasty? I'm in.
Also, one note before we dig in. I'm a big fan of infomercials. I just can't help but crack up at the ridiculous way the actors exaggerate the difficulty of doing a specific task (there's got to be a better way!). My all-time favorite infomercial is the one for the Magic Bullet, and I know I'm not alone in my love for that particular gem because I have actually watched it with friends multiple times. One of my favorite parts (one of many) is when Mimi is making chicken salad, and that rascal Mick sneaks in a little bit of curry powder right at the end, and Mimi says, "curry powder for everything!" through clenched teeth but while still maintaining her happy hostess smile. And I think of that pretty much any time I use curry powder. For everything. You have to at least watch that part, but I won't blame you if you watch the whole thing.
Ingredients!
It's really important to get good curry for this recipe since it's such a prominent flavor in this dish - that will really make a big difference in how it tastes. (I know - I sound like Barefoot Contessa telling you to get GOOD curry powder, but it's important!)
In a large slow-cooker, combine the tomato paste, garlic, curry powder, ginger, cumin, and ¾ cup water, and whisk together.
Add the onion and stir to combine. Place the chicken on top and season with salt and pepper.
Pop on the lid and cook until chicken is tender and cooked through, 7 to 8 hours on low or 3 to 4 hours on high.
Use two forks to lift out the chicken breasts and shred them on a cutting board.
Whisk the yogurt into the sauce...
...return the chicken to the slow-cooker and stir to combine.
Spoon over basmati rice and sprinkle with sliced green onions! (Don't skip the onions - they add a great freshness! And they're a pretty pop of color.)
So super easy, and yummy noises await you!
