'Tis the season of holiday parties...and holiday parties call for dips!
Well...I could argue that any party calls for dip - but I digress.
This Mediterranean layer dip looks gorgeous and impressive on the plate, and it is SO STINKING EASY. It will take you literally a few minutes to put together. I love the combination of the fresh, crunchy veggies on top of the creamy hummus, and it's a great lighter option that's filling and packed with protein and fiber.
This recipe is based on a Mediterranean Dip that I used to get at my favorite grocery store in the Chicago area. (Mariano's if you're listening...I miss you!) Their version also has a couple tablespoons of sliced Kalamata olives on top of the dip, which is very fitting with the Mediterranean theme. If you're a fan of olives, toss some on there! I personally don't particularly like olives so I left them off in my version but hey...your dip, your rules!
If you want to be a little fancier, you can make your own hummus for this dish with my sister-in-law's family recipe for Authentic Creamy Hummus (if you've never made hummus before, give it a try...making your own hummus is easy too!). But you can definitely keep it super simple by just using your favorite store-bought hummus.
Spread out the hummus on a plate, top it with the cucumber, tomatoes, feta and parsley and boom - you're done.
Pita chips are the perfect dipping vessel. Crunchy, salty and strong enough to really scoop up all the delicious elements of the dip in one fell swoop.

Mediterranean Layer Dip
Ingredients
- 1 ½ cups hummus (about 12 oz)
- ½ cup diced english cucumber
- ½ cup halved cherry or grape tomatoes
- 2 tablespoon crumbled feta cheese
- 1 tablespoon chopped fresh parsley
- 1 small bag baked pita chips (or gluten-free pita chips or crackers), for serving
Instructions
- Spread hummus in an even layer onto a plate or small platter. Top evenly with cucumber, tomatoes, feta and parsley. Serve with pita chips for dipping.
